Avocado On Toasted Sourdough
Although this is just simple avocado on toast, it really is the sweet red chilli, cherry tomatoes and lime that lifts it.
It is a quick, simple, healthy and delicious breakfast, or light lunch recipe.
Rich in vitamins, minerals with the essential fats and fibre we need for good health.
Provides anti-inflammatory and anti-oxidant benefits.
Serves 2
Takes 10 minutes
Ingredients
- 1 ripe avocado
- ¼ red chilli chopped
- ¼ squeeze lime
- big bunch spinach leaves
- 4-5 slices sourdough bread (or gluten free if required)
- 20g butter
- lug Extra virgin olive oil
- sea salt & black pepper
Method
Pop the slices of bread into the toaster.
Meanwile, slice the avocados.
Squeeze the lime over the avocados.
Remove the toasted bread from the toaster.
Butter the toast.
To Serve
I love to make this as a sharing plate.
Scatter the spinach on to the plate.
Place the toast on the plate.
Add the slices of avocado on top of the toast.
Scatter the cherry tomatoes around the toast.
Drizzle with extra virgin olive oil.
Scatter the chilli over the avocados.
Season with sea salt and black pepper to suit your taste.
