Banana Porridge

This is a perfect quick, simple, healthy and delicious breakfast recipe.

Rich in vitamins, minerals, fibre and in omega-3 fatty acids which provide a super boost to the start of your day.

Kids also love it; this was always a popular dish when my son was young.

Serves 2
Takes 10 minutes

Ingredients

  • 80g oats (optional use gluten free)
  • 320ml milk (dairy or plant based)
  • 1 ripe banana
  • 2tbs mixed seeds
  • pinch sea salt

Method

Slice a few pieces off the end of the banana and sit to one side for the topping.

Mush the rest of the banana with a fork.

Place the milk, oats, rest of the banana and sea salt into a pan and heat gently on the hob.

Keep stirring the porridge for 5 minutes until cooked.

 

To Serve

Pour the porridge into two bowls.

Add the slices of banana.

Sprinkle the seeds.

Optional: Drizzle a little milk over the top.

Tips

The riper the banana the sweeter.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
