Chicken Noodle Broth

I have been making a version of this chicken noodle broth since my teens, it was easy to make and a great cost affective meal.
Full of flavour with a soothing effect on the gut, and the soul.
The chicken stock it will also provide collagen and amino acids that contribute to healthy digestion, joint health and supports the immune system.
Serves 2
Takes 10 minutes
Ingredients
- 600ml chicken stock broth
- Chicken stock recipe here
- 80g diced cooked chicken pieces
- 80g broken rice noodle pieces
- 1tsp bouillon powder
- 2tsp mushroom ketchup
- 1tsp anchovy paste
- bunch fresh parsley
- sea salt and black pepper
Method
Pour the chicken stock broth into a pan on a medium heat.
Add the bouillon powder, mushroom ketchup, anchovy paste, sea salt and pepper and stir well.
When the liquid is hot, add the rice noodle pieces and stir.
After a few minutes, check if the rice noodles are getting soft, but not yet cooked, then add the chicken pieces.
Allow the rice noodle to cook through completely, and the chicken pieces to become warm.
To Serve
Pour the chicken noodle broth into two bowls. Sprinkle with the chopped parsley.
Add sea salt and pepper to your taste.
Note
If you have used frozen chicken stock broth and frozen chicken pieces, do not reheat again after making the chicken noodle broth.
If the chicken stock broth and chicken pieces are fresh you can store the chicken noodle soup in the fridge or freezer. It makes a great quick healthy ready meal.
Store
Fridge 3 days.
Freezer 3 months.

Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
