Chicken Stock – Bone Broth

Full of goodness and flavour which can act as a base for soups and broths or simply sip as it is.

Rich in protein vitamins, minerals, collagen and amino acids that contribute to healthy digestion, joint health and supports the immune system.

Makes 1500ml
Takes 3 – 4 hours

Ingredients

  • 1 pre-roasted chicken carcass & bones
  • 1 roughly chopped white onion
  • 2 roughly chopped carrot
  • 3 roughly chopped celery sticks
  • 3 peeled garlic cloves
  • 4 bay leaves
  • 8 black pepper corns
  • 2 litres cold water
  • 1 tbs mushroom ketchup
  • 1tbs ‘Boullion’ powder
  • sea salt & black pepper

Method

Pour a little of the water over the roasting tin that the chicken was cooking in and stir until all of the juices and flavours from the roasted chicken are released.

Place the onions, carrots, celery, garlic, bay leaves and pepper corns into the pan.

Pour all of the water and the chicken juices into a large pan and stir well.

Place the lid onto the pan.

Bring the stock liquid up to boil.

Once boiling point is reached turn the heat down to a very low heat, gently simmer.

Skim off any scum off the top of the water, if any.

Simmer for approx 3 hours.

Remove from the hob and strain the bones and bits away.

Strain again to ensure the stock is clear.

Put the stock back into the pan and add the mushroom ketchup, Boullion, sea salt and pepper to your taste. Place the lid on the pan.

Allow to cool.

Pour the stock into x3 500 ml containers.

 

To Serve

Use as a base for soups and broths or simply sip as it is as a healthy bone broth.

 

Store

Fridge 3 days.
Freezer 3 months.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
