Classic Coleslaw

A quick and easy coleslaw to prepare.

Rich in vitamins, minerals and fibre. It’s also good for your gut.

A great side dish to go with so many lunch or main recipes.

Serves 4
Takes 15 minutes

Ingredients

  • 2 medium carrots
  • ¼ small white cabbage
  • ¼ small white onion
  • ½ Squeezed lemon juice
  • 1tsp ‘Bouillion’ powder
  • 4tbs mayonnaise
  • Pinch sea salt & pepper

Method

Finely shred the white cabbage.

Make wafer thin slices with the white onion.

Grate the carrots.

Add the white cabbage, white onion and carrots into a mixing bowl and stir.

Add the lemon juice, mayonnaise, ‘Bouillion’ powder and mix well.

Add sea salt & pepper to your own taste.

 

To Serve

Place the carrots on to the plate.

Sprinkle the crumbled feta cheese over the carrots.

Drizzle with the extra virgin olive oil & fig vinegarette.

Scatter the toasted salted seeds over the top.

Add the sea salt & pepper to suit your taste.

 

Tips

You can make your own mayonnaise but for ease use a pre-made, bought one.

This coleslaw makes a perfect, super healthy accompaniment in a packed lunch box.
