Coconut, Cinnamon Oat Cake
I have been making this oat cake for over 20 years as a delicious sweet treat for my son who had ADHD. I adopted the love for it and it’s still a favourite of mine. Simple to make and healthy.
Simply prepare and store in the fridge or freezer ready to grab as a sweet snack.
Rich in vitamins, minerals and fibre.
Provides a slow release of energy to keep you going throughout your day.

Ingredients
- 100g dried apricots
- 100g medjool dates
- 100g butter (dairy or plant)
- splash water
- 150g oats (optional gluten free)
- 50g desiccated coconut
- 1tsp cinnamon
- 1tsp baking powder
- 1 medium egg, beaten
- drizzle maple syrup
- 1tsp mixed seeds
Note: If you use plant butter you may need to loosen the batter with more water or add some coconut oil.
Method
Pre heat the oven 180°C or 350 °F.
Lightly grease 7’’ square baking tin.
Gently heat the dried apricots, medjool dates, butter and water into a pan.
Use a hand blender to create a paste batter.
Add the oats, desiccated coconut (keep a tsp back for the topping), cinnamon, baking powder and beaten egg to the batter, mix well.
Pour the batter into the baking tin.
Press the batter down firmly.
Brush the top with maple syrup, add the seeds whilst it is still wet and sticky to allow the seeds to stick.
Place into the oven for 15 to 20 minutes.
Once golden in colour remove from the oven.
Brush the top with maple syrup, add the desiccated coconut whilst it is still wet and sticky to allow the pieces of coconut to stick.
To Serve
Take out of the fridge and eat!
Take out of the freezer approx. 1 hour before eating.
Store
Fridge 3 days.
Freezer 1 month.
