Creamy Mushroom Soup

An easy to make and a great cost affective soup.
Full of delicious earthy flavour.
Rich vitamins and minerals.
If you opt to use chicken stock it will also provide collagen and amino acids that contribute to healthy digestion, joint health and supports the immune system.
Serves 2
Takes 30 minutes
Ingredients
- 1 chopped celery stick
- 4 chopped spring onions
- lug rapeseed oil
- 600ml stock (vegetable or chicken)

- 130g pre -cooked chestnut mushrooms

- 1tsp mushroom ketchup
- 2 tsp porcini mushrooms paste
- 2tbs cream (optional or dairy free alternative)
- bunch chopped fresh parsley
- sea salt & black pepper
Method
Gently heat the oil in a pan on the hob.
Add the celery and spring onions to the pan and allow to gently cook with the pan lid on, stir occasionally.
Pour the stock into a pan, and stir.
Add the mushrooms, (hold a handful back to add as garnish), mushroom ketchup, porcini mushroom paste, sea salt and pepper then stir well.
Remove the pan from the heat.
Blitz the liquid and ingredients with a hand-held blender until the liquid becomes smooth.
To Serve
Pour the mushroom soup into two bowls. Sprinkle with the remaining mushrooms and the chopped parsley.
Optional: Add the cream for a rich creamy soup.
Add sea salt & pepper to your taste.
Note
If you have used frozen chicken stock or frozen pre-cooked mushrooms, do not reheat again after making the creamy mushroom soup.
If the chicken stock and pre-cooked mushrooms are fresh, you can store the creamy mushroom soup in the fridge or freezer. It makes a great quick healthy ready meal.

Fridge 3 days.
Fridge 1 month.
