Creamy Tarragon & Thyme Chicken

Creamy and delicious, with fresh flavours.

It is a simple, healthy recipe rich in protein, vitamin B12 and fibre.

If you opt to use chicken stock it will also provide collagen and amino acids that contribute to healthy digestion, joint health and supports the immune system.

Serves 4
Takes 60 minutes

Ingredients

  • 4 chicken breast or 6 thighs
  • (cut into large pieces)
  • 250ml white wine
  • 400ml chicken stock

  • 4oog cannellini beans (optional)
  • 3 cloves crushed garlic
  • 1 stick celery diced
  • 1 leek diced
  • 1 shallot diced
  • lug olive oil
  • 15g butter (optional)
  • 1tsp dried tarragon
  • 1tsp dried thyme
  • 1tsp anchovy paste
  • 50ml cream (or dairy free option)
  • sea salt & black pepper

Method

Gently heat the oil and butter in a pan on the hob.

Add the crushed garlic, celery, leek and shallot into the pan, stir, and gently cook on a low to moderate heat until soft.

Add the tarragon, thyme, anchovy paste, sea salt and black pepper to the pan, stir, and cook for 5 minutes.

Add the white wine to the pan, stir and cook for 10 minutes.

Add the chicken stock to the pan, stir, then add the chicken pieces.

Cook the chicken very gently for 20 minutes.

Add the cannellini beans, gently heat for 10 minutes.

Remove the pan from the hob, allow to cool for 5 minutes.

Add the cream, stir.

 

To Serve

Ideal served with green vegetables, wholegrain rice or a piece of rustic bread.

 

Store

Fridge 3 days.
Freezer 3 months.

 

Tips

I like to make extra of this dish to freezer, for a ready home-made meal.

Ideally use bio-degradable freezable sealable bag. Once filled with a single portion, lay it flat in the freezer.

To defrost, place the bag into a jug of tepid water until thawed.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
