Easy Tray Bake Full English Breakfast

This is a perfect quick, simple, and healthier full English breakfast without the frying of the food.
A full English breakfast cooked in one tray makes this so easy, with just one tray to wash up at the end!
Rich in protein, vitamins, minerals and in omega-3 fatty acids which provides a punch of energy to start your day.
Serves 2
Takes 30 minutes
Ingredients
- 4 eggs
- 4 to 6 sausages
- punnet of mushrooms
- 100g baked beans
- 6 to 8 ripe tomatoes on the vine
- bunch spinach
- lug of oil
- pinch sea salt & black pepper
Method
Pre heat the oven to 200°C or 390 °F.
Pour a lug of oil onto a large baking tray, then add the sausages.
Place the baking tray into the oven, cook the sausages for approx. 10 minutes, turning occasionally.
Add the tomatoes, cook for 10 minutes.
Add the mushrooms and the baked beans cook for 5 minutes.
Crack the eggs onto the baking tray, cook for approx. 3 to 4 minutes or until the eggs are cooked to your liking.
Remove the baking tray from the oven and toss in the spinach.
To Serve
Add some season sprinkle, sea salt and black pepper to suit your taste.
Buttered sourdough toast.
