Green Veg & Parmesan Salad

A delicious dish full of health and flavour.

Excellent source of vitamins, minerals, protein and fibre.

Rich in cell protecting anti-oxidants.

Serves 2
Takes 20 minutes

Ingredients

  • 2 small courgettes cut into 6cm slices
  • 1 small broccoli cut into florets
  • handful green beans
  • 6 – 8 cos lettuce leaves
  • lug extra virgin olive oil
  • splash water
  • 2tbs pesto sauce
  • (see pesto sauce recipe here)
  • 50g grated / shaved parmesan or dairy free alternative 
  • sea salt & black pepper

Method

Pre heat the griddle pan until hot, add a lug of olive oil on to the pan.

Place the slices of courgette onto the griddle pan.

Allow the courgette to cook until golden with a nice char, then place to one side.

Meanwhile, heat up a pan of water to a boil.

Drop the broccoli into the boiling water for just 1 to 2 minutes just to soften but not cook the broccoli. Then remove, run under cold water and sit to one side.

Drop the green beans into the boiling water for just 1 minutes just to soften but not cook the green beans. Then remove, run under cold water and sit to one side.

Place the courgettes, broccoli, green beans, cos lettuce leaves, extra virgin olive oil, sea salt and black pepper into a mixing bowl and gently stir.

 

To Serve

Garnish with a drizzle of the pesto sauce.
Sprinkle over the parmesan.
Season with sea salt & black pepper and more pesto sauce to your taste.
A squirt of lemon juice is optional.

 

Note

This dish will take longer if you do not have the pesto sauce already made.

 

Tips

Add a splash of water to the pesto if it needs loosening. This is a great dish to make double the quantities to have extra portions for a healthy packed lunch.

 

Store

Fridge 3 days.
