Healthy Potato Wedges
A quick, easy to make, healthy tray of yummy potato wedges.
Rich in vitamin c, a great anti-oxidant boost for the cells in the body and skin. Provides potassium which is an essential mineral for good health.
Serves 2
Takes 30 -40 minutes
Ingredients
- 2 medium potatoes cut into wedges (skin left on)
- 1tbs paprika
- lug olive oil
- pinch table salt
- sea salt
Method
Pre heat the oven to 200°C or 390 °F.
Place the potato wedges, oil, paprika and table salt into a mixing bowl, covering the wedges evenly.
Place the potato wedges on to a baking try.
Sit the wedges skin side down.
Place the baking try into the oven for approx. 30 to 40 minutes, turning the wedges during this time.
Allow to cook until the potato wedges golden and crispy.
To Serve
Add sea salt to your taste.
These yummy potato wedges can accompany a wide range of dishes and sauces, one of my favourites is with a Ribeye steak and Coleslaw.
