Honey Roasted Fennel Bulbs
A super quick, easy to make, healthy dish of delicious caramelised fennel bulbs.
Rich in minerals such as sodium, potassium, magnesium, phosphorus and calcium. Includes vitamins which boosts the anti-oxidant benefits to the cells in the body and skin.
A subtle liquorice flavour, full of goodness that will not disappoint to satisfy you and your appetite whatever you make to eat with them.
Serves 2 to 3
Takes 60 minutes
Ingredients
- 3 fennel bulbs cut in half vertically
- 250ml white wine (optional)
- 30g honey
- lug of olive oil
- pinch sea salt & black pepper
Method
Pre heat the oven to 160°C or 320 °F.
Place the fennel bulbs into a baking dish.
Drizzle the olive oil and honey over the fennel bulbs, coating them evenly.
Season with sea salt and black pepper.
Pour over the white wine (optional).
Cover the baking dish with foil, then place into the oven for approx. 30 minutes or until the fennel bulbs are cooked but still firm.
Turn up the heat of the oven to 200°C or 390 °F.
Remove the foil from the baking dish and place back into the oven to cook for a further 20 minutes, until golden and caramelised.
To Serve
There are so many ways you can serve these delicious caramelised fennel bulbs.
Great in a salad, or a perfect side dish to accompany many main meals.
Tips
I often make double these quantities so I have plenty to freeze. They make a great ready-made healthy side dish.
Portion into sealable, biodegradable freezer bags and label. Then lay flat on top of each other for perfect space saving in your fridge or freezer.
Store
Fridge 3 days.
Freezer 1 month.
Food Produce
Ideally use organic food produce where possible.
Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
Consider eating more sustainable foods.
