Mackerel & Pickle On Toast
Although this is just simple mackerel on toast, it really is the pickles that lifts it.
It is a perfect quick, simple, healthy recipe rich in protein, essential omega-3 fats, vitamins and minerals. The gherkins and sourcrout provides an excellent source of fibre and probiotics which supports a healthy gut.
A great protein and energy pick me up for any time of the day.
Serves 2
Takes 20 minutes
Ingredients
- 150g mackerel
- 2 gherkins diced
- 1tbs extra virgin olive oil
- or 1tbs mayonnaise
- 1tsp horseradish
- bunch rocket leaves
- bunch chopped parsley
- 4 slices sourdough & rye bread (or gluten free if required)
- 25g butter (or dairy free alternative)
- sea salt & black pepper
- 2 tbs fresh sauerkraut
Method
Pop the slices of bread into the toaster.
Place the mackerel, olive oil or mayonnaise, horseradish, sea salt and blackpepper into a mixing bowl, separate the fish steaks and make an even mixture.
Add the gherkins into the mixture.
Remove the toasted bread from the toaster.
Butter the toast.
To Serve
Place the toast on the plate.
Add the mackerel mixture on top of the toast.
Pop the bunch of rocket leaves and parsley on top of the mackerel mixture.
Place the sauerkraut on the side.
Add sea salt and black pepper to suit your taste.
Tips
I always keep a store of tinned mackerel as it is ideal for this recipe.
