Mango & Coconut Yogurt Chia
This is a perfect quick, simple, healthy and delicious breakfast recipe. Simply prepare it the night before ready to enjoy in the morning.
Rich in protein, vitamins A, C, minerals, omega-3 fatty acids and live yogurt which provide live bacterial cultures that are great for the gut.
A breakfast that gives you a super release of energy to start your day.
I often make this recipe as a healthy pudding or sweet treat.
Serves 2
Takes 5 to 10 minutes
Ingredients
- 4tbs chia seeds
- 200ml coconut milk
- 2tbs live coconut yogurt
- 2tbs creamy coconut yogurt
- 1tsp vanilla paste
- 1 ripe chopped fresh mango
- 1 ripe sliced banana
- 4tbs mixed seeds
- 1tbs bee pollen
- 2tbs almonds (or alternative nuts)
Method
Place the coconut milk and yogurt into a jug.
Add the chia seeds and stir well.
Prepare the rest of your ingredients.
Return to the chia mixture and stir well again.
Pour the chia mixture into 2 350ml sterilised jars.
Place the mango and banana on top of the chia mixture.
Sprinkle on the nuts & seeds.
Drizzle the vanilla paste over the toppings.
Place in the fridge overnight.
To Serve
Personally, I prefer my chia at room temperature.
Take out of the fridge an hour before eating if you prefer it this way.
Alternatively just take out of the fridge and eat!
If you are an early bird like myself, I actually make this over a coffee first thing in the morning, I get on with my morning yoga and its perfect to eat in a few hours.
I often prepare this to take to work.
Tips
I often make double these quantities so I have plenty to keep for another day.
This recipe goes well using an alternative plant based milk or dairy milk.
Store
Fridge 3 days.
Food Produce
Ideally use organic food produce where possible.
Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
Consider eating more sustainable foods.
