Minty Courgette Dip
A simple, tasty dip to make.
Excellent source of vitamin C, potassium and folic acid.
Courgette provides fibre which supports healthy digestion and gut microbiome.
A great side dish to add to many recipes or simply as a dip.
Makes 350ml
Takes 60 minutes
Ingredients
- 500g courgette diced
- ½ white onion diced
- 2 crushed garlic cloves
- 30g extra virgin olive oil
- 2tsp dried mint
- sea salt and pepper
- bunch fresh mint leaves to garnish
Method
Gently heat the oil in a pan on the hob.
Add the onions and garlic, stir well.
Place the lid on the pan and allow the onions to cook slowly, approx. 10 mins.
Add the courgette, stir well.
Place the lid on the pan and allow the courgette to cook very gently, stir on occasions, approx. 30 mins.
Once the mixture has the consistency of a dip add the mint, stir well.
Allow to cool.
Decanter into a serving bowl.
To Serve
Ideal as a tasty dip with sourdough, pitta bread or bread of your choice. I enjoy this dip served with Manchego cheese and a piece rustic of sourdough.
Tips
This dip keeps well in the fridge for a few days. Decanter into a sterilised 350ml glass jar with a lid.
Store
Fridge 3 days.
