Parsnip & Zaatar Soup

An easy to make delicious soup with a hint of Zataar.

Rich vitamins and minerals.

If you opt to use chicken stock it will also provide collagen and amino acids that contribute to healthy digestion, joint health and supports the immune system.

Serves 3 to 4
Takes 30 minutes

Ingredients

  • 2 chopped celery sticks
  • 2 chopped srigs of spring onions
  • 500g parsnips
  • 25ml olive oil
  • 25g butter (optional)
  • 1litre stock (vegetable or chicken)
  • (chicken stock recipe)
  • 240g cannellini beans
  • bunch chopped fresh parsley
  • 2tsp zaatar
  • pinch sea salt & black pepper

Method

Gently heat the oil and butter in a pan on the hob.

Add the parsnips, celery and spring onions to the pan, stir, then place the pan lid on.

Allow to gently cook until soft, stir occasionally.

Pour the stock into a pan, and stir.

Add the chopped parsley, sea salt and pepper and stir well.

Remove the pan from the heat.

Blitz the liquid and ingredients with a hand-held blender until the liquid becomes smooth.

Place the pan back on to the hob.

Add the cannellini beans and zaatar, stir well.

Allow the cannellini beans to heat through.

 

To Serve

Pour the soup into two bowls. Sprinkle with toasted mixed seeds and the chopped parsley.

Optional: Add the cream for a rich creamy soup.

Add sea salt and pepper to your taste.

 

Note

If you have used frozen chicken stock, do not reheat again after making the soup.

If the chicken stock is fresh, you can store the soup in the fridge or freezer. It makes a great quick healthy ready meal.

 

Store

Fridge 3 days.
Fridge 1 month.
