Pesto Sauce
A quick, simple, healthy and delicious pesto recipe that packs a punch of flavour.
Rich in vitamins, minerals, protein and provides an abundance of anti-oxidants.
Great to accompany many dishes.
Makes approx. 150ml
Takes 10 minutes
Ingredients
- big bunch fresh basal leaves + stalks
- 2 – 3 cloves garlic crushed
- 50g parmesan cheese diced (or dairy free alternative)
- 50g pine nuts
- 100ml extra virgin olive oil
- ¼ squeezed lemon
- pinch sea salt & black pepper
Method
Place the basal, garlic, parmesan, pine nuts, extra virgin olive oil, lemon juice, sea salt and black pepper into a food processor.
Blitz until it is the consistency to your choice, whether a smooth sauce or more textured.
Pour in to a 200ml sterilised jar.
To Serve
There are so many options; on pasta, courgetti, sandwich, chicken or any dish you like to give it a punch of flavour.
Tips
Add a splash of water or more extra virgin olive oil to loosen it up if you prefer.
Store
Fridge 1 week.
