Roasted Cauliflower & Halloumi Cheese
My healthier, tasty version of cauliflower cheese.
Excellent source of vitamin A and C, those cells protecting anti-oxidants.
Rich in protein, calcium and fibre.
An ideal lunch or main dish.
Serves 2
Takes 50 minutes
Ingredients
- 1 medium cauliflower cut into thick slices
- 250g halloumi cheese cut into medium slices
- 200g cherry tomatoes
- 30ml olive oil
- 1tsp sumac spice
- pinch table salt
- sea salt & pepper
Method
Pre heat the oven to 200°C or 390 °F
Place the cauliflower slices onto a large baking tray.
Drizzle the cauliflower with olive oil.
Sprinkle the cauliflower with sumac, table salt and black pepper.
Put the cauliflower into the oven and cook for 20 minutes.
Remove the cauliflower from the oven, turn the slices, then return back to the oven for 5 minutes.
Remove from the cauliflower from the oven and place the slices of halloumi onto the cauliflower slices.
Scatter the cherry tomatoes over the cauliflower.
Drizzle with olive oil.
Return the baking try back to the oven for approx. 20 minutes until the cauliflower and halloumi is golden with a slight browning, and the cherry tomatoes are starting to burst.
Remove the tray from the oven.
To Serve
Ideally serve this dish on a bed of greens such as spinach, rocket, watercress or a mix of all three. Lay the greens on to a plate and the cauliflower cheese over the top, scatter the cherry tomatoes. The heat of the cauliflower wilts the greens.
Add sea salt and black pepper to your taste
Tips
I often make more of this dish to eat as a snack or as a packed lunch.
Store
Fridge 3 days.

Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
