Roasted Chestnut Mushrooms & Garlic
A super quick, easy to make, healthy tray of delicious mushrooms.
Rich in vitamins, minerals and high in selenium which boosts anti-oxidant benefits to the cells in the body and skin.
Earthy, dense goodness that will not disappoint to satisfy you and your appetite whatever you make with them.
Serves 2
Takes 20 minutes
Ingredients
- 250g sliced chestnut mushrooms
- 3 squashed garlic cloves in skin
- 30g extra virgin rapeseed oil
- 1tbs mushroom ketchup
- sea salt & black pepper
Method
Pre heat the oven to 200°C or 390 °F.
Place the mushrooms, garlic cloves, extra virgin rapeseed oil and mushroom ketchup into a baking try and cover with foil.
Place the baking try into the oven for approx. 10 minutes or until the mushrooms are cooked but still firm.
To Serve
There are so many ways you can serve these yummy mushrooms.
Simply on their own with a pinch of sea salt, pepper and a sprinkle of parsley to suit your taste.

Tips
I make a tray of these most weekends, and store them, juices and all, ready to create a meal quickly when I am so busy during the week.
Food Produce
Ideally use organic food produce where possible.
Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
Consider eating more sustainable foods.
