Simple Farmhouse Lentils

A delicious, comforting lentil dish full of health and herby flavours.

A nutritional powerhouse of essential protein, vitamins, minerals and fibre.

If you opt to use chicken stock it will also provide collagen and amino acids that contribute to healthy digestion, joint health and supports the immune system.

Serves 4-6
Takes 60 minutes

Ingredients

  • ½ white onion diced
  • 2 celery sticks diced
  • 2 carrots diced
  • 3 crushed garlic cloves
  • 350g green lentils
  • 1 litre stock (chicken or vegetable)
  • (Chicken Stock Recipe)
  • lug of olive oil
  • 2tbsp porcini mushroom paste
  • 3 dried bay leaves
  • 1 – 2tbs mixed dried herbs
  • 1 – 2tbs dried thyme
  • 1 tbs dried sage
  • 1tps Dijon mustard (optional)
  • bunch chopped parsley
  • sea salt & black pepper

Method

Pour the oil into a very large pan and gently heat on the hob.

Add the onions, celery and garlic into the pan and cook out on a gentle heat until soft, stir occasionally.

Add the dried oregano, thyme, sage, bay leaves and parsley stalks. Allow to cook out on a gentle heat for 10 minutes, stir occasionally.

Add the lentils, stock, porcini mushroom paste and cook slowly for 15 to 20 minutes.

Add the Dijon mustard if you want a little flavour boost.

 

To Serve

Serve simply as it is. Or I enjoy this with some pre-cooked chicken, my partner opts for this with cooked sausages!
Garnish with chopped parsley.
Season with sea salt & black pepper to your taste.

 

Tips

Ideal to store if you have any servings left over.

Portion into sealable, biodegradable freezer bags and label. Then lay flat on top of each other for perfect space saving in your fridge or freezer.

 

Store

Fridge 3 days.
Freezer 3 months.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
