Smoked Salmon & Salad Slim Bagel

This is just the simplest light lunch for when you’re in a hurry and not prepared any other lunch.

It is a perfect quick, simple, healthy recipe rich in protein, essential omega-3 fats and several vitamins, minerals.

A great protein and energy pick me up for the middle of the day.

Serves 2
Takes 10 minutes

Ingredients

  • 100g smoked salmon
  • 4 crunchy salad leaves
  • 10 slices cucumber
  • 2 wedges fresh lemon
  • 2 sourdough slim bagels
  • 15g butter
  • pinch sea salt & black pepper

Method

Pop the slices of bagel into the toaster until golden.

Remove the toasted bagel from the toaster.

Butter the bagel.

Add the salad leaves, cucumber and smoked salmon.

Squeeze the lemon juice.

Season with sea salt & pepper to your taste.

 

To Serve

Place the bagel on the plate and enjoy.

It makes a great on the go lunch. Simply cover the bagel in kitchen paper and put it into a biodegradable sandwich bag.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
