Spiced Sweet Potato, Carrot, Lentil, Coconut Soup

A really quick and easy meal to prepare.
Although this is just simple soup, it’s the spices combined with the coconut cream that make this such a tasty meal.
It is a perfect quick, simple, healthy light lunch or main meal recipe.
Rich in vitamin C And A, minerals, fibre and protein. It’s also good for your gut.
A comforting bowl of healthy goodness.
Serves 4
Takes 30 minutes
Ingredients
- 1 cup red lentils
- 750ml vegetable stock
- 400ml tin coconut cream
- 500g peeled carrots, chopped
- 500g peeled sweet potato, chopped
- 25ml olive oil
- 15g butter (optional)
- 2 crushed garlic cloves
- 2tbs ginger finely chopped
- 1tsp fresh red chillies
- bunch fresh coriander
- (chop the stalks separate to the leaves)
- 1tsp dried chillies
- 1tsp cumin powder
- 1tsp turmeric
- 2tsp ground coriander
- 2tbs toasted salted mixed seeds
- sea salt & black pepper
Method
Heat the oil and butter in a large pan on the hob.
Add the crushed garlic, ginger, fresh chilli if you like more heat, dried chili, coriander, cumin, turmeric, sea salt and black pepper into the pan, stir, and gently cook for 2 to 3 minutes.
Add the vegetable stock to the pan, stir.
Add the lentils, sweet potato, chopped coriander stalks and carrots.
Cook the lentils, sweet potato, carrots and chopped coriander stalks, very slowly and gently cook for 15 to 20 minutes, until the lentils are cooked and the sweet potato and carrots are tender.
Add the coconut cream, stir, and heat.
Remove the pan from the hob.
To Serve
Garnish with the fresh coriander leaves and fresh chilli. Sprinkle with the toasted seeds.
Store
Fridge 3 days.
Freezer 3 months.

I like to make extra of this dish to freezer, for a ready home-made meal.
