Spinach & Manchego Omelette

Although this is just a simple omelette, it is a quick healthy and delicious breakfast, or light lunch recipe.

Rich in protein, vitamins, minerals and in omega-3 fatty acids which provides good longevity energy.

I highly recommend to use free range eggs. Check out your local farmers market or research the type most suited to you. Select well and you will not be disappointed with that vibrant orange/yellow yolk.

Serves 2
Takes 15 minutes

Ingredients

  • 6 eggs gently beaten
  • 50g grated Manchego cheese
    (or alternate cheese)
  • handful of fresh spinach
  • ¼ finely diced white onion
  • lug olive oil
  • pinch sea salt & black pepper

Method

Heat the oil in a frying pan on the hob.

Add the onions and gently cook for a few minutes.

Add the spinach and gently cook until the leaves wilt.

Sit the cooked veg mix to one side.

Heat a lug of oil in the frying pan.

Add the eggs, keep stirring until the eggs start to coagulate, then allow the eggs mixture to cover the pan base.

Add a good pinch of sea salt and black pepper.

Allow the egg to cook until the underneath is a golden colour.

Add the Manchego and the cooked veg mix to one side of the omelette, then fold over the other side to cover the cheese and veg.

 

To Serve

I love a bit of parsley on top.

Add sea salt & black pepper to suit your taste.

This is delicious simply by itself or with a fresh green salad.

 

Tips

I have an intolerance to cow’s dairy hence why I use a sheep’s version which I can tolerate. The Manchego does give that nutty yummy flavour but you can use whatever cheese suits you and your preference.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
