Super Greens & Bean Soup
An easy to make and a great cost affective soup.
Full of delicious earthy flavours with a peppery hit.
Rich vitamins, minerals and protein.
If you opt to use chicken stock it will also provide collagen and amino acids that contribute to healthy digestion, joint health and supports the immune system.
Serves 2
Takes 30 minutes
Ingredients
- 1 celery stick diced
- 3 sprigs of spring onions diced
- 100g Cavolo Nero
- 1 crushed garlic clove
- 25ml olive oil
- 20g butter (or alternative)
- 600ml stock (vegetable or chicken)
- (Chicken stock recipe)
- 400g tin haricot beans
- 1tsp dried mixed herbs
- 2tbs chopped fresh parsley
- 2 wedges fresh lemon
- sea salt & black pepper
Method
Remove the thick vein from the Cavolo Nero, dice into small pieces.
Chopp the Cavolo Nero leaves.
Rinse and drain the haricot beans, sit to one side.
Gently heat the oil and butter in a pan on the hob.
Add the celery, spring onions, garlic and diced Cavolo Nero vein to the pan and allow to gently cook with the pan lid on, stir occasionally.
Pour the stock into a pan, and stir.
Add the chopped Cavolo Nero leaves, half of the parsley, dried mixed herbs, sea salt and pepper and stir well.
Remove the pan from the heat.
Blitz the liquid and ingredients with a hand-held blender until the ingredients blends together.
Return the pan back to the heat, then add the haricot beans.
Allow the haricot beans to heat through.
*If you like a bit of texture to your soup add half of the Cavolo Nero leaves before blitzing and the other half to cook out before you add the haricot beans.
To Serve
Pour the super green soup into two bowls.
Add a squeeze of lemon.
Add cream (Optional)
Sprinkle with fresh chopped parsley.
Add sea salt & pepper to your taste.
Note
If you have used frozen chicken stock do not reheat again after making the soup.
If the chicken stock is fresh, you can store the super green soup in the fridge or freezer. It makes a great quick healthy ready meal.
Tips
Why not make double the quantity with fresh chicken or vegetable stock to ensure you have some left over to pop into the freezer for a quick super healthy ready-made soup.

Fridge 3 days.
