Sweet Pepper Coleslaw
A quick and easy coleslaw to prepare.
Excellent source of vitamin A and C which are rich in cell protecting anti-oxidants. It’s also rich in fibre which supports a healthy gut.
A great side dish to go with so many lunch or main recipes.
Serves 3 to 4
Takes 15 minutes
Ingredients
- ¼ small white cabbage
- ¼ small red onion
- ¼ red pepper
- ¼ yellow pepper
- ¼ orange pepper
- ¼ Squeezed lemon juice
- 1/2 tsp ‘Bouillion’ powder
- 1- 2 tbs mayonnaise
- sea salt & black pepper
Method
Finely shred the white cabbage.
Make wafer thin slices with the red onion and all of the peppers.
Add the white cabbage, white onion and peppers in to a mixing bowl and stir.
Add the lemon juice, mayonnaise, ‘Bouillion’ powder and mix well.
Add sea salt & pepper to your own taste.
To Serve
An ideal coleslaw to accompany many dishes. I love this with chicken dishes and green salad.
Add the sea salt & pepper to suit your taste.
Tips
You can make your own mayonnaise but for ease use a pre made one.
Store
Fridge 3 days.

Ideally use organic food produce where possible.
Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
