Sweet & Spice Chicken Tagine
A delicious, warming and comforting tagine full of health, with sweet and spicy flavours.
A nutritional powerhouse of essential protein, vitamins, minerals and fibre.
This recipe is a batch pot which allows servings to be put into the freezer. Reduce the quantities by ½ or ¼ to suit you.

Takes 120 minutes
Ingredients
- 2 (250g) tins chickpeas
- 2 (250g) tins plum tomatoes
- 8 chicken thigh pieces de-boned
- 2 large chopped white onions
- 2 sweet peppers
- 4 – 6 cloves crushed garlic
- 2 inch cube chopped ginger
- 2 preserved lemons diced
- 1 seeded chopped red chilli
- 1 lime squeezed
- bunch chopped fresh parsley
- lug extra virgin olive oil
- 3tbs dried oregano
- 1tbs ground cumin
- 1tbs ground ginger
- 1tbs gound cinnamon
- 1tbs ground coriander
- 1tbs paprika
- 1tbs turmeric
- 15 dried apricots diced
- pinch sea salt & black pepper
Method
Pour the oil into a very large pan and gently heat on the hob.
Add the onions to the pan and gently cook until soft.
Add the garlic to the pan and gently cook until soft.
Add the dried oregano, ground cumin, ginger, cinnamon, coriander, turmeric, paprika and cook out on a gentle heat for 15 minutes.
Add the sweet pepper, chilli and ginger, and cook slowly for 15 minutes. Stir occasionally.
Add the plumb tomatoes, stir well.
Allow to simmer for 50 minutes with the pan lid on.
Add the chicken pieces and continue to simmer for 15 to 20 minutes or until the chicken is cooked.
Add the chickpeas, apricot pieces, preserved lemon, lime juice, sea salt and black pepper, stir well, then cook for 10 minutes.
To Serve
Serve with a portion of cooked wholegrain rice or couscous, roasted vegetables or simply serve on top of of a bunch of baby spinach leaves .
Garnish with the parsley.
Season with sea salt & black pepper.
Tips
Portion into sealable, biodegradable freezer bags and label. Then lay flat on top of each other for perfect space saving in your freezer. A quick healthy, ready-made meal at your disposal. Simply take the bag out of the freezer, place into a jug of cold water to de-frost and re-heat.

Fridge 3 days.
Freezer 3 months.
