Tomato, Basil & Mozzarella Salad

This is a quick and easy to make fresh flavoursome salad.

Excellent source of vitamins A and C, potassium and fibre.

Rich in cell protecting anti-oxidants.

A great side dish or light lunch.

Serves 2
Takes 25 minutes

Ingredients

  • 8 room temperature ripened vine tomatoes
  • 1 large buffalo mozzarella ball (or dairy free alternative)
  • 25ml extra virgin olive oil
  • 8ml white wine vinegar
  • big bunch fresh basil leaves
  • sea salt & black pepper

Method

Slice the tomatoes and place into a mixing bowl.

Pour the extra virgin olive oil and white wine vinegar, over the tomatoes.

Add the sea salt and black pepper, stir well.

Break the basil leaves with your fingers, (keep a few leaves back to garnish) and stir.

Break the buffalo mozzarella with your fingers into pieces thenadd to the salad.

Decanter the salad into a serving bowl.

Cover the salad and allow the sit for 15 minutes.

Garnish with whole basil leaves.

Season with sea salt and black pepper to your taste.

 

To Serve

A great salad served with rustic bread to soak up those delicious juices, select the bread of your choice. I often make this as a sharing dish as a light lunch.

 

Tips

Ideally use buffalo mozzarella and room temperature ripe vine tomatoes to achieve optimum flavour.

Option is to make this salad without the buffalo mozzarella.

 

Store

Fridge 2 days.
