Tuna & Caper Salad Wrap
This is just the simplest light lunch for when you’re in a hurry and not prepared any other lunch.
It is a perfect quick, simple, healthy recipe rich in protein, vitamins, minerals and amino acid taurine.
A great protein and energy pick me up for the middle of the day.
Serves 2
Takes 10 minutes
Ingredients
- 150g drained tin tuna steak
- 1tbs pickled capers
- 1tbs mayonnaise
- pinch sea salt & black pepper
- bunch lettuce leaves
- 8 thinly slices of cucumber
- 2 soft tortillas (gluten free if required)
- 8 cherry tomatoes
Method
Place the tuna steak, mayonnaise, salt and black pepper into a mixing bowl, separate the fish steaks and make an even mixture.
Add the capers into the mixture.
Lay out the tortillas onto a board.
Add the lettuce leaves and cucumber into the width of the tortillas, leave an inch either end, then spread the tuna mix over the top.
You can add the tomatoes now if you want, but I find it makes the tortilla soggy.
Fold in the edges of the tortilla, then roll into to a tight wrap.
Cut the wrap into half.
To Serve
Place the wrap on the plate with the cherry tomatoes and a side of leaves.
Ideal for an on the go lunch. Simply cover the wrap in kitchen paper and put it into a biodegradable sandwich bag along with the cherry tomatoes.
Food Produce
Ideally use organic food produce where possible.
Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
Consider eating more sustainable foods.
