Woodland Mushroom & Grain Salad

A super quick, easy to make, healthy delicious warm mushrooms and grain salad.

Rich in vitamins, minerals, high in selenium, protein, fibre and essential fatty acids which boosts anti-oxidant benefits to the cells in the body and skin.

Earthy, but fresh salad of goodness that will not disappoint to satisfy you and your appetite.

Takes 20 minutes

Ingredients

  • 200g mixed woodland mushrooms
  • 100g pre-cooked wild rice & quinoa
  • lug olive oil
  • bunch fresh mixed leaves
  • bunch fresh parsley, chopped
  • 1 inch red onion very thinly sliced
  • 1cm finely chopped red chilli
  • 1tsp zaatar
  • 1tsp ground garlic
  • lug extra virgin olive oil
  • dressing – 3/2 extra virgin oil to white wine vinegar, Dijon mustard
  • 1 ripe sliced avocado
  • pinch sea salt & black pepper

Method

Heat the olive oil in a pan over the hob until hot.

Add the mushrooms, ground garlic, sea salt and black pepper to the pan, flash fry until the mushrooms are cooked but still firm.

Remove the pan from the heat.

Add the grains to the pan to warm through for a few seconds.

Empty the pan of ingredients into a large mixing bowl.

Gently stir in the chopped parsley, mixed leaves, red onion, dressing, sea salt, black pepper and zaatar.

 

To Serve

Place the mushroom salad onto a serving plate, add the sliced avocado and sprinkle with the red chilli.

 

Tips

I always have a store of pre-cooked wild rice and quinoa in the freezer ready to use at short notice. Simply cook the grain, allow to cool, then place into a biodegradable sealed freezer bag. Separate the grains in the bag to ensure they do not stick in clumps, then freeze.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
