Zesty Lemon & Olive Roast Potatoes

A super quick, easy to make, healthy tray of delicious baby potatoes with preserved lemon and black olives, a great yin yang of flavours.

Rich in vitamin c, an anti-oxidant boost for the cells in the body and skin. Provides potassium which is an essential mineral for good health.

A zesty dish that will not disappoint to satisfy you and your appetite, great with the Zesty Lemon Roasted Chicken.

Serves 4
Takes 60 minutes

Ingredients

  • 750gm baby new potatoes
  • 3 squashed garlic cloves
  • 30gm extra virgin British rapeseed oil
  • 4tbs kalamata olives (stones removed)
  • 2 preserved lemons sliced
  • Pinch sea salt & pepper

Method

Pre heat the oven to 200°C or 390 °F.

Place the potatoes (half any if needed to make each roughly the same size), garlic cloves, extra virgin British rapeseed oil into a baking try.

Place the baking try into the oven for approx. 40 minutes or until the potatoes are almost cooked with some golden colour.

Add the sliced preserved lemon and kalamata olives, place back into the oven to allow them to heat and the potatoes to a achieve that full golden roast colour.

These tasty potatoes can accompany a wide range of dishes, one of my favourites is the zesty lemon roasted chicken.
