Zesty Lemon Roasted Chicken
A delicious roasted chicken with a hint of zesty lemon.
It is a quick, simple, healthy recipe rich in protein, and vitamin B12.
An ideal dish for entertaining.
Serves 4 to 6
Takes 120 minutes
Ingredients
- 1 medium chicken
- 1 lemon roughly chopped
- 1 white onion roughly chopped
- 3 crushed garlic cloves
- Bunch fresh parsley & thyme roughly chopped
- 25gm butter
- 25ml extra virgin olive oil
- Pinch sea salt & pepper
Method
Pre heat the oven to 190°C or 370 °F.
Remove any giblets from the chicken cavity.
Place the lemon, onion, herbs, butter, sea salt and pepper into the cavity of the chicken.
Place the chicken breast side down onto a baking tray.
Coat the exposed parts of the chicken with the extra virgin olive oil.
Pop into the oven.
Take the chicken out of the oven and baste occasionally.
After 1 hour take the chicken out of the oven and flip it breast side up.
Place it back into the oven and all to cook for the remaining recommended time for the size of the chicken.
Allow the chicken to be cooked, then remove from the oven.
Cover the chicken with foil and allow to rest for 20 to 30 minutes.
To Serve
It is a great centre piece if entertaining. I love to serve the chicken whole with side dishes of ‘Zesty Roasters & Olives’ and ‘Coleslaw’.
Store
Fridge 3 days.
Freezer 3 months.
Tips
Strip the chicken of any meat and slice. Store in the fridge or freezer to provide quick access to delicious chicken when you need it. Keep the carcass and bones to make chicken stock broth.
