Apple & Almond Tart

Simple to prepare delicious low sugar desert.

Serves 8
Takes 30 to 40 minutes

Ingredients 

  • 1 large cooking apple peeled & sliced
  • squeeze of lemon juice
  • 50g ground almonds
  • 2 tbs soft brown sugar
  • 1tsp cinnamon powder
  • 1-2tsp vanilla paste
  • 1tbs almond butter
  • 1 roll pre prepared puff pastry
  • 1tsp apricot preserve
  • 4tbs flaked almonds
  • splash of milk
  • dash icing sugar

Method 

Pre heat oven to 200°C or 390 °F

Heat the apples with 2 tbs of brown sugar and a splash water in a pan on the hob.

Allow to simmer gently for approx 5 to 10 minutes until softened slightly, then drain any excess water.

Add the cinnamon and vanilla paste then cook gently for a further 2 minutes then remove from the heat and sit to one side.

Roll out the prepared pastry onto a piece of parchment paper then place a 10 inch plate up side down in the middle. Cut a circle out of the pastry.

Mix together the ground almonds and almond butter then spread it an inch from the outer edge of the pastry circle,  2 inch wide.

Position the apple slices on top of the almond paste.

Push the outer edge of the pastry up to the edge of the apples.

From the centre point of the pastry cut into 8 wedges, then fold back the pointed edges to the outer edge of the pastry circle.

Milk wash the pastry the place into the oven to cook for 15 to 20 minutes.

Remove from the oven and slide the pastry onto a baking sheet.

Mix the apricot preserve with a few drops of water to loosen it, then brush it over the top of the apples and pastry.

Sprinkle the flaked almonds to stick onto the apricot preserve.

Dust with icing sugar.

 

To Serve

Simply as it is with a cuppa, or with a serving of cream (or dairy free alternative).
