Apple & Cinnamon Oat Cakes
Simple to prepare a delicious healthy, sweet snack.
Makes 8
Takes 30 – 40 minutes
Ingredients
- 200g medjool dates
- 100g butter (dairy or plant alternative)
- splash water
- 150g oats (optional gluten free)
- 50g cooked apple chopped and blotted
- 50g cooked apple finely sliced
- 1tsp cinnamon
- 1tsp baking powder
- 1 medium egg, beaten
- drizzle honey
Method
Pre heat the oven 180°C or 350 °F.
Lightly grease 7’’ square baking tin.
Gently heat the medjool dates, butter and water into a pan until the butter melts and dates soften.
Use a hand blender to create a buttery, date paste, then mix in the beaten egg to make a batter.
Add the oats, cinnamon and baking powder to the batter and mix well.
Stir in the chopped apple.
Pour the batter into the baking tin.
Press the batter down firmly.
Drizzle the top with the honey, then add the slices of apple whilst it is still wet and sticky to allow the apple to stick.
Place into the oven for approx 20 minutes.
Once golden in colour remove from the oven.
Allow to cool.
To Serve
Simply prepare and store in the fridge or freezer ready to grab as a sweet snack.
Take out of the fridge and eat!
Take out of the freezer approx. 1 hour before eating.
To Store
Fridge 3 days.
Freezer 1 month.
Tips
I always have a packet of frozen cooked apples in the freezer ready to use anytime and to save time.
Food Produce
Ideally use organic food produce where possible.
Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
Consider eating more sustainable foods.
