Balsamic Brussels & Goats Cheese

A quick healthy meal full of delicious flavour.
The veggies are full of vitamins and minerals which are rich in protective antioxidants, along with gut healthy fibre.
Goat cheese is a good source of protein, healthy fats, vitamins and minerals. The fatty acids found in goat’s milk are known to contain antibacterial qualities.
Serves 2
Takes 20 minutes
Ingredients
- 300g Brussels sprouts cut into half
- 300g new potatoes cut into half
- 1 to 2 clove grated garlic
- 30ml olive oil
- 30ml balsamic vinegar
- 1tbs honey
- 100g goats cheese sliced
- sea salt & black pepper
Method
Place the potatoes into a pan of water and bring to the boil on the hob, then turn the heat down to gently simmer until the potatoes are just cooked.
Once cooked drain, then place to one side.
Mix together the some of the olive oil, garlic, balsamic vinegar, honey, sea salt and black pepper into a bowl, then add the Brussels and potatoes until they are fully coated.
Heat the rest of the olive oil in a large pan until hot, then add the Brussel sprouts and potatoes.
Allow to cook, stirring, until golden and charred.
Remove the pan from the heat.
Carefully mix the goat’s cheese into the Brussels and potatoes.
To Serve
Serve on a bed of rocket or greens of your choice.
