Cajun Chicken

 A delicious healthy recipe rich in protein, and vitamin B12, along with vitamin A and C.

A taste sensation and great as a sharing dish.

Serves 2 to 3

Takes 30 minutes 

 

Ingredients 

 

  • 1tbsp Cajun spice mix
  • ¼tsp cayenne pepper
  • 2 skinned boneless chicken breasts
  • 3tbs rapeseed oil
  • 1 red pepper sliced
  • 1 orange or yellow pepper sliced
  • 1 white onion sliced
  • 2 cloves garlic finely sliced 

Guacamole

  • 1 ripe avocado mashed
  • 1/2 squeezed lime juice
  • 1/4 red chilli finely chopped

Salsa

  • 4-6 medium tomatoes diced
  • ½ cucumber diced 
  • 1 small garlic clove sliced
  • 1/2 squeezed lime juice
  • 1tbs of white wine vinegar 
  • small handful of fresh coriander chopped

Other

  • 6 Thin wraps200mlfresh natural yogurt
  • 200ml fresh natural yogurt.

Method

Place the sliced chicken, Cajun spice mix, cayenne pepper and a lug of vegetable oil into a bowl, then stir ensuring the chicken pieces are fully coated. Allow to sit for 1/2 to 1 hour out of the fridge.

Heat a lug of vegetable oil in a large frying pan on a medium to high heat.

Add the chicken to the pan, keep stirring until the chicken is cooked, then sit the cooked chicken to one side.

Lower the heat to the pan, then add a lug of vegetable oil, then add the sliced peppers, sliced onions and garlic, stir continuously for a few minutes.

Allow the veggies to cook slowly on a low heat for approx. 10 minutes. Stir occasionally.

While the peppers are slowly cooking make the guacamole and salsa.

Place the mashed avocados, lime juice, red chilli and a pinch of sea salt into a bowl, stir all of the ingredients together, taste to adjust seasoning. Place into a serving bowl.

Place the tomatoes, onion, garlic, lime juice, white wine vinegar and fresh coriander into a bowl stir all of the ingredients together, taste to adjust seasoning. Place into a serving bowl.

Turn up the heat on the pan, add the cooked chicken stirring everything together.

 

To Serve

Place the Cajun chicken on to a serving plate. Sprinkle with fresh chopped coriander. Please folded wraps on the side.

Place the guacamole and salsa bowls next to the plate of chicken.

Place the natural yoghurt into a small serving bowl and place next to the Cajun chicken.

I love to spread the gucamole, salsa and yogurt onto the centre of the wrap with a seving of the Cajun chicken, then roll into a wrap.

 

 

Tips

For ease buy ready-made wholewheat wraps.

Fridge 3 days.
