Caper Coleslaw

A quick and easy coleslaw to prepare.
Rich in vitamins, minerals and fibre. It’s also good for your gut.
A great side dish to go with so many lunch or main recipes.
Serves 4
Takes 15 minutes
Ingredients
- ¼ small white cabbage
- 2tbs caper berries
- 1tbs whole caper berries sliced
- 3 – 4 cornichons chopped
- 1tbs mayonnaise
- good lug olive oil
- slash white wine vinegar
- wedge squeezed lemon juice
- bunch fresh parsley chopped
- sea salt & black pepper
Method
Finely shred the white cabbage.
Add the white cabbage, caper berries, sliced caper berries and chopped cornichons into a mixing bowl and stir.
Add the mayonnaise, olive oil, white wine vinegar, lemon juice, chopped parsley and mix well.
Add sea salt & black pepper to your own taste.
To Serve
Garnish with fresh parsley.
