Easy Thai Green Curry

This is a quick and easy to make Thai Green Curry recipe rich in protein, and vitamin B12, along with vitamin A and C.
I used to make my own Thai green curry paste but found it very difficult to buy the ingredients easily.
Now I use pre-made Thai pastes which are rich in flavour, taste amazing, quick and easy use with the convenience of always having a pack or two in my store cupboard.
Serves 3
Takes 20 minutes
Ingredients
- 1 to 2tbs Thai green curry paste
- 300ml coconut milk
- 100ml water
- 2 chicken breasts thinly sliced
- 6 baby sweetcorn sliced diagonally
- 12 mangetouts sliced diagonally
- 1 courgette thinly sliced
- (or 10 Thai aubergines if you can find them)
- 1/2 fresh lime squeezed
- 1 to 2tbs fish sauce
- 1 to 2tsp palm sugar or coconut sugar
- (add more to suit your taste)
- 1 fresh chilli sliced diagonally
- bunch fresh chopped coriander
Method
Shake the can of coconut milk well, then pour it into a pan.
Rinse the empty can with 100ml of water then add to the pan.
Place the pan on a medium heat, then add the green curry paste to the coconut milk and stir well until the paste has dissolved, then lower the heat.
Add the sugar, a squeeze of lime juice and fish sauce to your specific taste.
Add the chicken to the pan and cook gently for approx. 10 minutes.
Add the sweetcorn, cook for approx. 3 minutes
Add the mangetout and courgette, cook for approx. 3 minutes
To Serve
Serve with cooked rice if your choice.
Ladle the Thai green curry into a bowl, sprinkle with the chopped fresh coriander and red chillies. Add a wedge of lime can be optional.
To Store
Fridge 3 days.

Ideally use organic food produce where possible.
Visit your local food suppliers or farmers market for fresh produce.
Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.
Select foods that are ethically sourced.
Ideally know the provenance.
Consider eating more sustainable foods.
