Takes 30 minutes

Ingredients

  • 400g minced lamb
  • 1/2 small white onion finely chopped
  • 1/4tsp black pepper
  • 1/4tsp ground cumin
  • 1/4tsp ground paprika
  • 1/4tsp ground coriander
  • 1/4tsp ground cloves
  • 1/4tsp ground nutmeg
  • 1/4tsp ground cinnamon
  • 1/4tsp ground cardamom
  • 1tsp garlic granules
  • 2tbs chopped fresh parsley

Method

Make the Lebanese spice mix.

Place the black pepper, cumin, paprika, coriander, cloves, nutmeg, cinnamon, cardamom and garlic granules together in a small bowl and stir until evenly blended.

Break the minced meat into a large bowl, then add the onions and Lebanese spice mix.

Massage the mixture until the mince takes on the spices, then mix in the parsley.

Divide the mince mixture into 4 equal portions, then squeeze each portion around a skewer to make a kofta shape.

Place the koftas to one side.

Coat a griddle pan with olive oil, then heat up until hot.

Add the koftas, keep turning until charred on all sides evenly.

To Serve

Perfect with Lebanese bread, fresh side salad and pickles.
