Massaman Curry

Such a quick, easy curry to make.
A delicious, warming and comforting curry full of health and flavour.
A nutritional powerhouse of essential vitamins, minerals and anti-oxidants.
If you like a more pungent curry increase the intensity of the paste used.
Serves 2 to 3
Takes 20 minutes
Ingredients
- 2-3tbs Thai red curry paste
- 300ml coconut milk
- 100ml water
- 2 cloves
- 1 star anise
- 1tsp cinnamon powder
- 1 cinnamon stick
- 2 chicken breasts thinly sliced
- 1/2 white onion sliced
- 1/2 red pepper sliced
- 10 baby sweetcorn sliced diagonally
- handful of mangetout sliced diagonally
- 1 sweet potato diced
- 1/2 fresh lime
- 2tsp fish sauce
- lug cooking oil
- 1 fresh chilli sliced diagonally
- 2 tbs chopped fresh coriander
- finely grated nutmeg
Method
Shake the can of coconut milk then pour into a pan, rinse the empty can with 100ml of water and add to the pan.
Heat the pan on the hob on a low to medium heat.
Add the red curry paste to the pan and stir well until blended into the coconut milk.
Add the cloves, star anise, cinnamon powder, cinnamon stick and fish sauce to the pan then heat on the hob to a gentle simmer to infuse the spices.
In the meantime, heat up the oil in a frying pan, add the onions, red pepper and half of the chilli, cook gently until soft.
Add the chicken and sweet potato to the coconut milk to cook for approx. 10 minutes.
Add the sweetcorn to cook for approx. 3 minutes
Add the mangetout to cook for approx. 3 minutes
Add the softened onions, red peppers and chilli.
Add a squeeze of lime juice and more fish sauce to your taste.
To Serve
Serve with cooked rice.
Sprinkle with the chopped fresh coriander and red chillies.
Finely grate nutmeg over the top.
To Store
Store in the fridge for 3 days and up to 8 weeks in the freezer.
