Mediterranean Chicken Tray Bake

A mediterranean inspired chicken tray bake.
It is a simple, healthy recipe rich in protein, and vitamin B12, along with vitamin A and C.
Simple and delicious.

Takes 75 minutes
Ingredients
- 4 skinless & boneless chicken thighs
- 1 onion cut into chunks
- 1/2 medium red pepper cut into chunks
- 1/2 medium yellow pepper cut into chunks
- 4 cloves whole garlic cloves peeled
- 12 kalamata olives
- 1 small preserved lemon sliced
- 8 slices sun dried tomatoes
- 10 ripe cherry tomatoes or sliced vine
- 1/2tsp celery salt
- 1/2tsp garlic salt
- 1tsp mixed herbs
- good lug olive oil
- hand full parsley
- good pinch black pepper
Method
Pre heat the oven to 180°C or 350 °F.
Place the chicken into a baking tray, then season with the celery salt, garlic salt, mixed herbs and black pepper.
Add the onion, garlic and peppers to the baking tray.
Coat all of the ingredients in the tray with the olive oil.
Place the baking tray into the oven, allow to cook for approx. 30 minutes.
Remove the baking tray from the oven, turning the ingredients half time.
Add the olives, preserved lemons, sun-dried tomatoes and tomatoes to the baking tray, then place back into the oven and allow to cook for a further 10 to 15 minutes.
Remove from the oven.
Sprinkle with chopped fresh parsley.
To Serve
Ideal served with couscous, roast potatoes or rice.
Tips
Use stoneless olives where possible, otherwise take care when eating.
To Store
Fridge 3 weeks.
Freezer 3 months.
