Parsley, Pickle Slaw

A quick and easy slaw to prepare.

Rich in vitamins, minerals and fibre that supports your gut.

A great refreshing side dish to go with many mains.

Serves 4
Takes 15 minutes

Ingredients

  •  ¼ small white cabbage
  • big bunch fresh parsley chopped
  • 4 medium salted gherkins
  • wedge squeezed lemon juice
  • 30ml olive oil
  • 10ml white wine vinegar
  • sea salt and black pepper

Method

Finely shred the white cabbage.

Add the white cabbage, parsley and gherkins into a mixing bowl and stir.

Add the olive oil, white wine vinegar and lemon juice and mix well.

Add sea salt and black pepper to your own taste.

 

To Serve

An ideal side to accompany many main meal dishes.

I typically have this with meat.

Select foods that are ethically sourced.
