Red Plants, Black Bean & Crumbly Cheese Salad

An easy to make healthy, delicious salad with a wonderful contrast of earthy, fresh and sweet flavours.
Rich in protein, vitamins, minerals, anti-oxidants and gut friendly fibre.
Takes 20 minutes
Serves 3 to 4
Ingredients
- 400g Black beans
- 1/4 small red cabbage
- 1 medium beetroot
- 1 medium gala apple
- 25g barberries
- 20 black grapes cut into half
- 1/8 red onion
- 2 wedges of fresh lemon
- bunch of mixed leaves
- bunch fresh parsley chopped
- fresh mint leaves chopped
- good splash white wine vinegar
- splash sherry vinegar
- good lug extra virgin olive oil
- 50g feta cheese crumbled
- Or crumbly goats cheese (or dairy free options)
- sea salt & black pepper
Method
Soak the barberries in some hot water until they have plumped up, then drain and sit to one side.
Add the extra virgin olive oil, white wine vinegar, sherry vinegar, sea salt and black pepper into a large mixing bowl, then stir well.
Add the beans to the bowl.
Finely shred the red cabbage, then add to the bowl.
Scrub off the beetroot skin and grate, then add to the bowl.
Wash the apple and grate, then add to the bowl.
Finely slice the onion then add to the bowl.
Add the barberries to the bowl.
Add the grapes to the bowl.
Add the leaves and a good squeeze of lemon into the bowl then stir all of the ingredients together, coating with the dressing.
Crumble the feta or goats’ cheese over the salad.
Add more sea salt & black pepper to your own taste.
To Serve
Simply serve as it is.
