Salmon Fish Cakes

Easy to make, delicious salmon fish cakes.

Provides essential nutrients such as vitamins B3 and D, protein and an excellent source of omega-3 fatty acids, making them extremely beneficial to support good health.

Makes 6 fish cakes
Takes 30 minutes

 

Ingredients 

  • 350g salmon roughly chopped (skin removed)
  • 100g potatoes cut into small pieces (optional to leave skin on)
  • 2tbs chopped fresh parsley
  • 1 to 2 beaten eggs
  • lug olive oil
  • 30g fine porridge oats
  • 45g panko bread crumbs
  • sea salt and black pepper

Method

Place the potatoes into a pan of cool water, heat the water until it reaches boiling, then lower the heat to a steady simmer until the potatoes are par cooked.

Dry the fish thoroughly if thawed from frozen.

Place the fish, par boiled potatoes, parsley pinch sea salt, black pepper and tablespoon of the beaten eggs into a food processor and blitz until all the ingredients come together.

Divide the fish mixture into 6 equal portions, then roll and shape into a fish cake.

Mix the porridge oats and panko breadcrumbs to make the breadcrumbs mixture.

Coat the fish cake in the remaining egg, then dip into the breadcrumbs, press the breadcrumb mixture into all sides of the fish cakes.

Repeat the above to achieve a good even layer of breadcrumb mixture.

Heat up olive oil in a pan on a medium heat, add the fish cakes.

Cook on both sides until golden and crisp.

 

To Serve

Simply perfect served with a fresh salad and a wedge of fresh lemon. A coleslaw compliments these fish cakes too!
