Apple & Celeriac Salad (Feta Cheese Optional)

A quick and easy salad to prepare.

Rich in vitamins, minerals and fibre that supports gut health.

A great refreshing side salad dish to go with many mains, or adapt into a main with crumbled cheese.

Serves 4

Takes 20 mins

 

Ingredients 

1/4 heart cabbage sliced finely

3 spring onion tops sliced finely

1 apple peeled & grated (skin on)

¼ celeriac peeled & grated

bunch rocket leaves

lemon juice squeezed from 3 wedges 

1 red chilli, sliced finely on an angle

handful coriander leaves roughly chopped

30 ml olive oil

3tbsp white-wine vinegar

pinch sea salt

pinch celery salt 

pinch ground black pepper 

2tsp sesame seeds

crumbled Feta Cheese (Optional)

Method 

Place the sliced cabbage, sliced spring onion tops, grated celeriac, grated apple, olive oil, white wine vinegar, lemon juice, celery salt and ground black pepper into a mixing bowl and stir all of the ingredients together.

Taste and add a pinch of sea salt if required.

Mix in the rocket leaves, coriander leaves and sliced red chilli.

 

To Serve

Serve on a plate.

Sprinkle with sesame seeds and feta cheese (optional).

 

Tips

I like to use a medium to hard apple with red skin for a bit of colour and crunch.

 

To Store

Fridge 2 days.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
