Cheese & Onion Egg Muffins

Easy to make healthy and delicious savoury muffins ideal for breakfast, light lunch or a snack.

Rich in protein, vitamins, minerals and in omega-3 fatty acids.

Makes 6 to 9
Takes 30 to 40 minutes

 

Ingredients 

  •  6 eggs
  • 150g cottage cheese (or a dairy free option)
  • 100g cheddar cheese grated (or a dairy free option)
  • 1/4 white onion finely chopped
  • 1/4 red peppers finely chopped
  • 2tbs parsley finely chopped
  • knob butter
  • lug of rapeseed oil
  • sea salt and black pepper

Method

Pre heat the oven to 190°C or 370 °F. 

Heat up the butter and oil into a pan over a medium heat on the hob.

Add the onions and red peppers, then allow to simmer until softened. Remove from the heat and sit to one side.

Crack the eggs into a mixing bowl and whisk together with a fork.

Add the cooked onions, red peppers, cottage cheese, grated cheese, parsley, sea salt and black pepper to the egg mixture until combined.

Spoon into a well-greased muffin tray to make about 6 deep muffins, or more if muffin tins not so deep.

Place the tray into the oven and bake for approx. 15minutes. Skewer the centre of a muffin to check if it comes out just dry to ensure the eggs are cooked. They carry on cooking once out of the oven so take care not to over cook in the oven.

 

To serve

Simply as they are or with a green salad works well.

Tips

I always have some pre-cooked onions and peppers stored in the freezer for quick use. I place the cooked onions and peppers into separate flat biodegradable bags as this takes only a few minutes to thaw. Ensure they are patted dry before use.

I highly recommend to use free range eggs. Check out your local farmers market or research the type most suited to you. Select well and you will not be disappointed with that vibrant orange/yellow yolk.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
