Feta, Mint & Rice Stuffed Roasted Beetroot

A delicious meal that provides an excellent source of vitamin A and C, those cells protecting anti-oxidants.

Rich in protein, calcium and fibre.

An ideal lunch or main dish.

Serves 2
Takes 60 minutes

Ingredients

  • 2 large beetroot bulbs washed
  • 1 medium whole white onion peeled
  • 80g crumbled feta cheese (or plant-based option)
  • 80g pre-cooked wholegrain rice
  • lug olive oil
  • 2tsp dried mint
  • few leaves fresh mint chopped
  • few sprigs fresh parsley chopped
  • lug of sherry vinegar
  • sea salt & black pepper

Method

Pre heat the oven to 200°C or 390 °F.

Coat the beetroot and onion with olive oil and place onto a baking tray.

Put the baking tray into the oven and cook for approx. 40 to 50 minutes.

When the beetroot feels soft to touch and the onion has caramelised remove the oven.

Carefully scoop out the centre of the beetroot, then leave it to one side.

Take care to leave the beetroot sides and base intact.

Chop the cooked onion, then place into a bowl.

Add the feta, pre-cooked rice, mint, parsley, a lug of olive oil, splash of sherry vinegar, sea salt and black pepper and stir well to make a filling mix.

Stuff the beetroot with the filling mix, then return back to the oven for 5 minutes.

In the meantime, chop the left-over beetroot, then place into a bowl. Add the sherry vinegar, sea salt and black pepper to make a beetroot salad.

Remove the tray from the oven.

 

To Serve

Carefully place the stuffed beetroot onto a serving plate.

Add a side of greens such as spinach, rocket, watercress or a mix of all three.

Add the beetroot salad.

Drizzle with olive oil.

Add sea salt and black pepper to your taste.

 

Store

Fridge 3 days.
