Peanut Butter & Tahini Energy Balls
Super quick, healthy and delicious snacks.
Simply prepare and store in the fridge or freezer ready to grab as a snack.
Rich in minerals and in omega-3 fatty acids which provide a super boost to physically and mentally.
Grab and go to give you a boost of energy during your busy day.

Ingredients
- 150gm medjool dates
- 50gm peanut butter
- 50gm tahini
- 50gm mixed seeds
- 25gm chia seeds
- 1/2tbs coconut oil
- 1tsp vanilla extract
- 1tbs wheatgerm
- pinch sea salt
Method
Blitz the dates, peanut butter, tahini, mixed seeds, coconut oi, vanilla extract, wheatgerm and sea salt in a food processor. Keep a few seeds back for the topping.
Mix in the chia seeds.
Scoop out a ball of mixture, I like to use an ice-cream scoop as it helps to gauge the ball size.
Roll the ball mixture to a compact ball.
Top with the few scattered seeds. This helps me to identify the flavour of the balls in the container I keep in the fridge or freezer.
To Serve
Take out of the fridge and eat!
Take out of the freezer approx. ½ hour before eating.
These energy balls tend to be softer than other types so best to eat chilled.
Store
Fridge 2 weeks.
Freezer 3 months.
