Potato Hash, Creamy Mushrooms & Poached Egg
A delicious earthy dish full of goodness.
Rich in vitamins, minerals, high in selenium, protein, fibre and essential fatty acids which boosts anti-oxidant benefits to the cells in the body and skin.

Ingredients
- 2 eggs
- 400g mixed mushrooms sliced
- 1/2 white onion diced
- 1 large potato diced
- big bunch baby spinach
- handful fresh parsley chopped
- 1tbs double cream
- 25g butter (or plant based alternative)
- good lug olive oil
- 1tsp nutmeg grated
- pinch garlic salt
- sea salt & black pepper
Method
Place the potato dices into a pan with some water, bring to the boil, then turn the heat down.
Allow the potatoes to simmer until partially cooked. Then remove from the pan, drain and sit to one side.
Heat a lug of olive oil in a large deep pan on a medium heat, add the onions, then cook until soft. Remove them from the pan and sit to one side.
Add more olive oil into the pan, turn up the heat, add the potatoes and cook on a high heat until they become crisp and golden. Remove from the heat, then transfer to the bowl of cooked onions.
Heat up some water to boil in a small pan, add a splash of vinegar then crack open the eggs to poach on a gentle simmer.
Add more olive oil, butter, mushrooms, black pepper, nutmeg to hot the pan, keep stirring until the mushrooms are cooked. Stir in the cream, then sit to one side.
Add the spinach to the hot pan, keep stirring until the spinach wilts.
Bring the dish together. Place the spinach onto a plate, add the onion, potato mix, add the mushrooms, place the poached egg on the top.
To Serve
Delicious as it is or with a piece of sourdough toast.
