Veggie Vietnamese Rolls

Simple to make fresh veggie Vietnamese rolls.

Full of vitamins and gut healthy fibre.

Makes 8

Takes 20 minutes

 

Ingredients

 

  • 8 8’’ rice paper discs
  • 2’’ wedge red cabbage
  • 1 large carrot
  • 2 spring onions
  • 2 cos lettuce leaves
  • 2 inch of cucumber
  • handful of tinned bamboo shoots
  • handful of fresh sweet basil leaves
  • handful of fresh mint leaves
  • handful of fresh coriander leaves

Method 

Cut the carrot into 2” lengths and into thin batons, then place to one side.

Cut the spring onions into 2” lengths and into thin batons, then place to one side.

Shred the lettuce leaves, then place to one side.

Cut the cucumber into thin batons, then place to one side.

Cut the bamboo shoots into thin batons, then place to one side.

Roll the basil, mint and coriander leaves like a cigar and shred finely, then place to one side.

Fill a 10” bowl with hot water, immerse a rice paper disc into the water until it softens, then remove from the water carefully and place onto a flat surface.

Add a small amount of each of the ingredients into the centre of the rice paper disc, then roll once, fold in the sides and roll again to make a neat firm veggie roll. Place to one side.

Repeat until each veggie roll is made.

 

To Serve

Ideal served with a peanut or sweet chilli dipping sauce.

Although these rolls are best served fresh, these will keep for a few days in the fridge.

 

To Store 

The best way to store a spring roll is to wrap it individually in plastic wrap before putting it in the fridge.

Store in an air tight container in the fridge for 3 days.

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
