White Wine, Herby Bean Stew

Delicious bean stew with fresh herby flavours.

It is a simple, healthy recipe rich in protein, vitamins, minerals and gut friendly fibre.

Serves 4
Takes 45 minutes 

Ingredients

  • 250ml white wine
  • 550ml vegetable stock
  • 1000g mixed beans
  • 3 cloves garlic grated
  • 1 stick celery diced
  • 1 leek diced
  • 1 white onion diced
  • lug olive oil
  • knob butter
  • 1-2tsp dried tarragon
  • 1-2tsp dried thyme
  • 1tsp anchovy paste
  • 50ml cream (or plant-based alternative)
  • bunch fresh parsley
  • squeeze fresh lemon juice
  • sea salt & black pepper

Method 

Heat the oil and butter in a pan on a low to medium heat on the hob.

Add the garlic, celery, leek and onion into the pan, stir, then place the pan lid on and gently cook until soft.

Add the tarragon, thyme, anchovy paste, sea salt and black pepper to the pan, stir, and cook for a further 5 minutes.

Add the white wine to the pan, stir, and cook it out for 10 minutes.

Add the stock to the pan, and cook it out for 5 minutes.

Add the mixed beans, gently heat the beans through.

Remove the pan from the hob, allow to cool for 5 minutes.

Stir in the cream.

 

To Serve

Ideal served with green vegetables, mash, wholegrain rice or a piece of rustic bread.

My favourite is served with Honey Roasted Fennel Bulbs.

 

Store

Fridge 3 days.

Freezer 3 months.

 

Tips

I like to make extra of this dish to freeze for a ready home-made meal.

Ideally use bio-degradable freezable sealable bags. Once filled with a single portion, lay it flat in the freezer.

To defrost, place the bag into a jug of tepid water until thawed.

 

Food Produce

Ideally use organic food produce where possible.

Visit your local food suppliers or farmers market for fresh produce.

Consider the animal welfare when selecting fresh meat,poultry, eggs and dairy.

Select foods that are ethically sourced.

Ideally know the provenance.

Consider eating more sustainable foods.
